Being passionate travelers means plenty of variations. Be it cloths, places, entertainments, or food, you have a large database of options in front of you. True, we were never ardent about cooking, but we were always one food loving couple. And, our interest for travel took us all the way from India to Nepal to Somalia to Maldives to Uganda. We did not travel to these countries for mere journey. We found jobs in every country, stayed for a couple of years, learned the ins and outs of their customs and practices, and then of course food. It's so wonderful to have them all shared it with you, the taste that we loved in India.

Puri (North India)


A very famous North Indian breakfast is Puri. A better way to explain the dish could be small round bread fried out in oil. The dish is commonly served with Potato Curry, Okra Fries, Chickpea curry, or simply with pickles. Although a North Indian breakfast, you may find Puri being served in most South Indian Restaurants as well.
Ingredients

All-purpose flour 1 cup
Whole wheat flour 1 cup
Salt to taste
Ghee 2 tablespoons
Water to knead dough
Vegetable oil to fry


Method
§  In a bowl combine all-purpose flour, whole wheat flour, and salt. Mix the three ingredients well; add 2 tablespoons of ghee to the mixture and mix once again.
§  Slowly add water and start kneading. Continue the process until you get the dough smooth. Keep the dough covered with a wet cloth and leave it for 20 to 60 minutes.
§  Divide the dough into several lemon-sized pieces, and roll them in between your palms to get them round. Press each ball to thin discs using a chapatti press.
§  Heat vegetable oil in a deep fryer or a deep pan. Fry each pressed flour discs in heated oil on both sides.
§  Once your disc is puffy golden, remove it using a kitchen spatula. Drain oil from the cooked puri using kitchen tissues. Serve hot.
By adding boiled Palak to the dough, Coriander powder, Chili powder, and Ginger paste you can have Palak Puri. And if you add boiled potatoes instead of boiled Palak, you can have Potato Puri.
